Ingredients
4 medium chicken breasts
1 tbsp Italian herb mix
2 shallots, finely diced
3-4 cloves garlic, minced
350ml Carol’s Stock Market Chicken Stock
2 tbsp cream cheese
2 tbsp lemon juice
2x (250g) bundles asparagus, ends trimmed
Salt & black pepper
To serve
4 portions rice or orzo pasta, cooked
OR thick slices of crusty bread
OR steamed new potatoes
Parmesan cheese, shaved or grated

Method
Place chicken breasts between 2 sheets of parchment paper and use a meat tenderiser or rolling pin to flatten the thickest part so that the breasts are a more uniform thickness.
Remove from parchment paper and season with the Italian herb mix and a bit of salt and pepper. Set aside.
Heat a large pan over medium high heat, once hot, add a drizzle of oil.
Arrange chicken in the pan and cook until golden on both sides and just cooked through, 4-5 minutes each side. Remove from the pan and set aside.
Reduce heat to medium, add a little more oil if needed, then add the shallots and sauté gently until just tender. Add the garlic and cook until fragrant, about 30 seconds.
To the pan, add the stock, cream cheese and lemon juice. Increase heat to medium high and bring to a boil, stirring the cream cheese into the stock until melted. Cook until sauce has thickened, 4-5 minutes.
Taste the sauce and add more salt and pepper if needed.
Return the chicken to the pan and add the asparagus. Cook until the asparagus is just tender, 2-3 minutes, then serve with your choice of starch, garnished with parmesan cheese and lemon wedges.
