Sometimes the best meals are the simplest ones. This Simply Saucy Chicken is pure comfort food at its finest - juicy chicken thighs seasoned with garlic, oregano, and a smoky paprika blend, then slow-roasted in a rich, flavourful gravy that practically makes itself. With minimal prep and maximum flavour, this one-dish wonder is perfect for busy weeknights or lazy Sunday dinners. Serve it over fluffy rice or creamy mashed potatoes to soak up every last drop of that luscious gravy - trust us, you'll want to.
Ingredients
For the chicken
1.2kg chicken thighs
3-4 cloves garlic, minced
2-3 tbsp olive oil
2 tsp dried oregano
1 tsp hot paprika
1 tsp smoked paprika
2 tsp flaky salt
1 tsp ground black pepper
500ml Carol’s Stock Market Chicken Stock
1 onion, cut in half and sliced
5-6 sprigs fresh thyme
2 tbsp plain flour
To serve
3-4 portions cooked rice or mashed potato

Method
Pre-heat oven to 180°C / 160°C fan assisted.
Place chicken into a large casserole dish then drizzle over the oil. Add the garlic, oregano, paprikas, salt and pepper. Toss chicken pieces until evenly coated, then arrange so that they’re skin side up in the dish.
Add the chicken stock to the dish, pouring it between the pieces of chicken so the chicken stays coated, then scatter the sliced onion over the top of the chicken and arrange the sprigs of thyme around the dish.
Cover the dish with its lid (alternatively, cover well with tinfoil) then bake in the oven for 1 hour 30 minutes.
Remove the dish from the oven and increase oven temperature to 230°C / 210°C fan assisted.
Remove the lid from the casserole dish and discard the sprigs of thyme, then carefully remove the chicken pieces and place them on a clean plate.
Spoon some of the juices into a small bowl then whisk in the flour to form a smooth paste.
Whisk this paste back into the remaining juices in the casserole dish then return the chicken pieces to the dish.
Return chicken to the oven without the lid and cook for a further 20-30 minutes.
Serve chicken with rice or mashed potato and plenty of the delicious gravy.
