There is no substitute for proper gravy. If you buy a ready made gravy, there can be so many preservatives in them. A lot of people think that making gravy is challenging but I have a simple recipe here for a delicious gravy that doesn’t even need the meat juices although they do add fantastic flavour if you have them. The key is in the stock – once you have a great stock, a gravy is so easy to whip together. Give this a go and you will see how healthy a natural gravy can be.
Ingredients
2 Tablespoons butter
2-3 Tablespoons of flour (use gluten free if you need to)
1 500ml pack of Carol’s Stock Market Beef Stock
1 teaspoon of pure maple syrup
1 teaspoon of fresh thyme
Sea salt and ground black pepper to taste

Method
Make a roux by melting the butter and adding in the flour using a whisk to make sure you have a smooth consistency. Slowly add the beef stock (and any meat juices if you have them). Add your maple syrup and keep stirring until your stock heats up and your gravy starts to thicken to the consistency you would like. Add your thyme and season to taste. That is it!
