A quick, simple, nutritious and delicious meal or side dish using our Vegetable Stock.
Olive oil, for cooking
1 medium onion, finely chopped
1 clove garlic, minced
300g dry green lentils, well rinsed
1L Carol’s Stock Market Vegetable Stock
1 tbsp tomato purée
2 large tomatoes, chopped
2 tbsp butter
Salt & pepper
Heat a large pot over medium heat with a drizzle of olive oil. Once hot, add the onion and gently cook, stirring occasionally, until onions are tender and translucent, 7-8 minutes. Add the garlic and cook for a further 1 minute, stirring occasionally.
Add the rinsed lentils, Carol’s vegetable stock and the tomato purée. Season with a pinch of salt. Increase heat to medium-high and bring to a boil. Leave to boil, uncovered, for 10 minutes, then reduce heat to medium low and leave to simmer uncovered until lentils are tender and the liquid has been absorbed, 20-25 minutes. Stir occasionally to avoid sticking.
Add the chopped tomato to the lentils and cook for another 2-3 minutes. Finally, stir through the butter and season to taste with salt and pepper.
A delicious side dish, or make it a main meal by serving with grilled or steamed green veggies.
