This month’s dish is a deliciously healthy take of fish and tomato sauce. Succulent chunks of fresh cod in a mouth-watering tomato sauce. I like to serve this dish with steamed new potatoes, home-made chips, or crusty bread. Ingredients
1 large shallot, finely diced
2 cloves garlic, minced
Olive oil
1x (400g) tin chopped tomatoes
150ml Carol’s Stock Market vegetable stock
5-6 Kalamata olives, pitted & sliced
8-10 fresh basil leaves, torn (plus extra for garnish)
Salt & pepper
4-6 fillets of cod

Method
Heat a drizzle of olive oil in a large sauté pan or shallow casserole pot over medium heat, then gently sauté shallot and garlic just until fragrant, 1-2 minutes.
Add chopped tomato, Carol’s vegetable stock and a light seasoning of salt and pepper. Simmer, stirring occasionally, until thickened slightly, about 5-8 minutes. Taste for seasoning and add more salt and pepper if needed.
Reduce heat to medium low and stir in olives and basil, season cod fillets with a bit of salt and pepper then arrange in the sauce, spooning the sauce over the fish.
Cover pan with lid and poach fish on a low simmer until fish is cooked through, 5-8 minutes.
Remove from heat and garnish with fresh basil. Serve with steamed new potatoes, home-made chips or crusty bread and a side of salad or steamed green veggies.
