Ingredients
1 medium onion, diced
1 large carrot, diced
2 clove garlic, minced
100ml good quality extra virgin olive oil
2 litres Carol’s Stock Market Chicken Stock
2x (400g) tins chickpeas, drained & rinsed
1 bay leaf
2 tsp dried oregano
4 tbsp lemon juice
Salt and pepper

Method
Place a large pot over medium heat. Once hot, add 2/3 of the olive oil then add the onion and carrot and sauté until tender, 2-3 minutes. Add the garlic and cook until fragrant, about 30 seconds.
Pour in the remaining olive oil along with the stock, chickpeas, bay leaf, oregano, and lemon juice. Season lightly with salt and pepper.
Bring to a boil over medium high heat, then reduce heat to medium low and leave the soup to simmer, uncovered, for about 30 minutes.
Taste for seasoning and add more salt and pepper if needed.
Serve with crusty bread.
