Ingredients
500ml Carol’s Stock Market Chicken Bone Broth with Turmeric & Ginger
125ml water
2x nests egg noodles
100g tofu (cubed) or other cooked protein of choice (shredded), optional
75g frozen peas
6 sugarsnap peas, sliced
1 medium carrot, finely diced
1 scallion, finely sliced
Light soy sauce or salt

Method
Bring stock and water to a boil over medium high heat in a medium sized pot.
Add the egg noodles, protein and vegetables, then season lightly with soy sauce or salt.
Reduce heat and simmer until the noodles are cooked, 2-3 minutes.
Remove from heat and taste for seasoning, add more soy or salt if needed.
Divide between two bowls and enjoy while hot. Delicious with a light drizzle of chilli oil if you like a bit of heat.
