This delicious and nutritious soup combines two of my all-time favourite ingredients; Butternut Squash and Sweet Potatoes. I love the rich, sweet flavours of this great combination. This is a really satisfying and filling soup that will warm you all over. There is a little kick to it from the curry powder. This recipe is quick to put together and only has a few ingredients.
Ingredients
1 knob of butter
1 teaspoon of olive oil
1 large white onion, diced finely
1 large sweet potato, peeled and diced into cubes
1 butternut squash, peeled and diced into cubes
1 teaspoon of curry powder
1 litre of Carol’s Stock Market Vegetable Stock
Salt and Pepper to season

Method
Melt your butter in a pot and add olive oil. Add your onions, curry powder and season lightly with salt and pepper. Soften the onions without browning which will take about 5-7 minutes. Add the sweet potato and butternut squash and stir everything together. Add your vegetable stock and bring to the boil, turn down the heat and simmer for about 25 minutes until the squash and sweet potatoes are tender. Using a hand blender, blend your soup until you get a smooth consistency. Enjoy!
